The body breaks down purines, which are naturally occurring substances found in many foods and within the body, into uric acid. In a healthy system, uric acid dissolves in the blood, is filtered through the kidneys, and exits the body through urine. However, when the body produces too much uric acid or the kidneys cannot process it efficiently, uric acid builds up in the blood, eventually forming sharp crystals in and around the joints. This is what leads to the painful inflammation associated with gout.
Various lifestyle factors, such as a diet high in purine-rich foods like red meat, organ meats, and shellfish, as well as excessive alcohol consumption and dehydration, can increase the risk of developing gout.
